What is Multi Grain Flour

Multigrain Flour designed and crafted under the supervision & instructions of Dt. Rafiya Farooqi is a nutritional powerhouse that combines various cereals, providing dietary fiber, antioxidants, vitamins, and minerals that contribute to overall health. The digestibility of carbohydrates from the daily diet is crucial for the human body’s insulin and blood sugar levels. Factors influencing starch digestibility include the source and structural characteristics of starch, the particle size of flour, and processing conditions. Small particle size flour has an increased specific surface area, allowing enzyme diffusion through the endosperm cell wall, leading to quicker starch digestion. However, large particle size impedes flour digestion, but not bread. This is due to the solubilization of arabinoxylan an β-glucan, the primary components of the cell wall, increasing during baking.
The processing conditions influence the accessibility of digestive enzymes and the integrity of the cell wall. The reduction in flour particle size also results in the discharge of other components within the cell wall. In recent years, wheat-based food products have been made with coarse grain flours to enhance nutritional quality and decrease glycemic index. Enzymatic hydrolysis of starch may be impeded by the large particle size of flour due to the barrier effect of intact cell walls and large and compact flour granules.
